Set in a comfortable, relaxing environment, Le Vauban is a completely renovated house with a courtyard, patio and dining room with old stone walls. The chef (Charlotte Boutillier) offers a bistronomic cuisine that is renewed each year according to the seasons and rigorously fresh produce throughout the year. The restaurant is just a stone's throw from the Château des Archevêques de Narbonne, in the heart of the village of Capestang, across the Canal du Midi. The following appellations are used to produce vines in the village: Coteaux d'Ensérune, Pays d'Hérault and Pays d'Oc.
