The couple formed by Stéphan Paroche on savory dishes and Justine Viano on sweet dishes (ex-Table de Castigno) create modern cuisine with several surprise menus, complemented by vegetarian options. It is the plant-based compositions – such as the appetizers or the iodized picking starter – that best reveal the quality of their skill. The fine wine list – rich in wines from Languedoc and Roussillon, but also Rhône vintages – is worth a look. One star.
